Pan-Seared Salmon with Roasted Sweet Potatoes & Asparagus

Ingredients
2 salmon fillets (6 oz each) (or 1 fillet if you’re Schones)
1 cup sweet potatoes, cubed
10–12 asparagus spears
1 tbsp olive oil
1 tbsp butter
Salt & cracked black pepper
Garlic powder
½ tsp paprika
Pinch of cinnamon
Fresh herbs (thyme, dill, or parsley)
Optional Pairing:
Pinot Grigio — light, crisp, and refreshing
(Totally optional at lunch… depends how the rest of your day’s looking 😏)
Instructions
Roasted Veggies
Preheat oven to 425°F.
Toss sweet potatoes with olive oil, salt, paprika, and a pinch of cinnamon.
Season asparagus with salt and pepper and dot lightly with butter.
Roast sweet potatoes for ~30 minutes, flipping halfway.
Add asparagus during the last 12–15 minutes until tender and lightly charred.
Salmon
Season salmon with salt, pepper, and garlic powder.
Heat a pan over medium-high with a little oil.
Sear salmon skin-side down for ~4 minutes, then flip and cook another ~3 minutes.
Finish with butter and fresh herbs, spooning the melted butter over the top.
Plate Build
Plate salmon alongside roasted sweet potatoes and asparagus.
Finish with fresh herbs and cracked black pepper.
