Ingredients
For the Pot Roast
~3 lb chuck roast
Salt & freshly cracked black pepper
Golden/ Red small potatoes
Garlic powder
1–2 tbsp ghee (or neutral oil)
2 bay leaves
Braising Liquid (Blend Together)
1½–2 cups beef broth
3–4 chipotle peppers in adobo
1–2 tbsp adobo sauce
2 tbsp minced garlic
2 tbsp apple cider vinegar
Juice of 1 lime
2 tbsp ground cumin
2 tbsp Mexican oregano (or regular oregano)
1 tbsp onion powder
1 tbsp garlic powder
½ tbsp salt
½ tbsp black pepper
For the Bowl
Steamed white rice
Fresh lettuce
Sliced avocado
Optional: roasted potatoes or extra rice
Instructions
Prepare the Braising Liquid
Blend all braising liquid ingredients until smooth. Set aside.
Season & Sear
Pat the chuck roast dry and season generously with salt, pepper, and garlic powder.
Heat ghee in a large skillet over medium-high heat. Sear the roast on all sides for 3–4 minutes per side until deeply browned.
Slow Cook
Pour a thin layer of the braising liquid into the bottom of a slow cooker. Add the roast, remaining liquid, and bay leaves. Small potatoes of your choice.
Cover and cook on HIGH for 4–6 hours or LOW for 8 hours, until fork-tender.
Shred & Soak
Remove bay leaves and shred the beef directly in the cooking liquid so it absorbs all that smoky, tangy flavor.
Build the Bowl
Start with warm rice, add shredded chipotle beef, fresh lettuce, and sliced avocado. Spoon a little extra sauce over the top.
