Ingredients

For the Salmon

  • 2 salmon fillets

  • Salt and freshly cracked black pepper

  • Olive oil

  • Fresh lemon, for finishing

For the Pasta

  • 6–8 oz penne pasta

  • 1 tbsp black truffle–infused olive oil

  • 1 small shallot, finely diced

  • ½ cup roma tomatoes, chopped

  • ½ cup heavy cream

  • ¼ cup reserved pasta water

  • Salt and black pepper, to taste

Instructions

  1. Cook the Pasta
    Bring a pot of well-salted water to a boil. Cook the penne until al dente according to package instructions. Reserve ¼ cup of pasta water, then drain and set aside.

  2. Season the Salmon
    Pat salmon dry and season generously on both sides with salt and freshly cracked black pepper.

  3. Sear the Salmon
    Heat olive oil in a heritage stainless steel pan over the high end of medium-low heat.
    Place salmon skin-side down and cook undisturbed for 4–5 minutes, allowing a golden crust to form naturally. Flip and cook an additional 2–3 minutes, just until cooked through. Remove from the pan and let rest.

  4. Build the Sauce
    Lower heat slightly if needed. In the same pan, add the shallots and sauté for 1–2 minutes until soft and fragrant. Add the chopped roma tomatoes and cook another 1–2 minutes until slightly broken down.

  5. Finish the Sauce
    Stir in the heavy cream and black truffle olive oil. Let the sauce gently simmer for 2–3 minutes. Add reserved pasta water as needed to loosen the sauce to a silky consistency.

  6. Combine
    Add the cooked pasta to the pan and toss until evenly coated. Season with salt and black pepper to taste.

  7. Serve
    Plate the pasta and top with the seared salmon. Finish with a fresh squeeze of lemon just before serving.

Chef Notes

  • Cooking salmon at the high end of medium-low allows stainless steel to build a proper crust without scorching.

  • Truffle oil should enhance, not dominate — restraint is key.

  • Lemon at the end brightens the dish and balances the richness.
